Turkey Curry Meatballs


1-2lbs Ground Turkey (2lbs made about 12 racquetball sized meatballs)
2 eggs
Curry Powder
1 can chicken broth
1 small onion finely chopped
Salt, Pepper, Cilantro, Parsley, Ginger Powder
Coconut/other cooking oil.
Ginger Garlic Paste

Combine: Turkey, Eggs, Salt, Pepper, Parsley, Cilantro and Ginger powder, in a bowl.
    Form into uniform size meatballs.
Brown meatballs in coconut oil, turning as needed.
Once browned, add onion, and Ginger Garlic Paste.
When onions begin to sweat, add Chicken broth.
Let meatballs simmer until done. (Maybe 20minutes)

Serve on Jasmine Rice.....



OR, keep it paleo: Serve on Sauteed squash, and Carrots. (I love curry and Butternut Squash.)

Shredded Pork Tacos.


2 lbs Pork shoulder steak. (yeah, a roughly 1" slice of pork shoulder, bone in) awesome
Dry Rub-  Cumin, Garlic Powder, Paprika, Onion Powder, Black Pepper, Ginger, Cayenne Pepper.
Avocado
1 1/2 Cups Chicken Stock
1/2 Cup Salsa
Lettuce or Spinach
Cheese
Tortillas

Combine all spices into a dry rub, (I don't measure, do what feels right)
RUB the rub into the pork, mine came as two individual steaks.
Brown the pork in a HOT, oven safe pan.
Once browned, add the stock to the pan, watch the awesome steam. Then add the salsa.

Try to scrape any crusty bits in the pan, so they get infused into the liquid mixture.
Place entire pan, uncovered, into a 350 degree oven for about an hour.
Once done shred pork with two forks, your choice to leave out or in the fatty bits.
Thoroughly mix shredded pork with the leftover juices, and your all set.
Cut Avocado, lettuce.

Now make a soft shell taco.

Keep it Paleo- Swap tortilla for Romaine lettuce leaf, or place all on a bed of spinach/lettuce.

Recipe easily modified to accommodate pulled pork for BBQ, Sandwiches, etc.
FYI- Pulled pork nachos are the best!

So, A blog.

Here goes....
      I am starting this blog mainly to keep track of some recipes of awesome things I am cooking lately.
That being said, I will provide a little background information about myself.
I am 29 have a wonderful wife and a tremendous two year old, and a new baby girl on the way. I like to partake in Adventure Races. An adventure race is similar to a triathlon, in that it is a multi-sport endurance race. Races can take anywhere from 3 hours to 3 weeks.  The activities included are biking, canoeing, and trekking/orienteering. I have 4 races this summer, so a lot of my free time is devoted to training. Most of my days go as followed: Wake,Gym,Work,PickUp Son,Make Dinner, EAT, Sleep. It is a pretty brutal schedule, getting up at 3am so I can make it to work, an hour away, by 7.  I am usually in bed by 8:30.
     Recently I have begun a Paleo, or Caveman, Diet. It means eating the way our ancestors did. No grains, legumes, or heavy starches. This new diet has really inspired me to start cooking again. It really makes you use your imagination and try things you have not before. This blog is going to serve as an online database of these recipes. Hopefully others will be able to use it to there advantage. While not all recipes will be Paleo compliant, most will have a Paleo version.
